Measure of dissolved oxygen in 4 steps
Inspired by the work published by M. Moutounet and J.P. Mazauric in the "Feuillet Vert" Nº 1085 of OIV "dosage of micro quantities of dissolved oxygen in wines".

- Place the Bottle
- Pierce the cork (or cap)
- Scan using the nitrogen measuring system - point zero
- Push the wine into the measuring system
- Piercing of the cork or screw cap is performed by nitrogen scanning, using a special bit.
- Cork, synthetic material, and aluminium chips are pushed by the flow of nitrogen and discharged.
- The sampling needle connected to sensors is placed, under nitrogen atmosphere, in the head space
- Nitrogen scanning is performed in all the sampling and analyzing system in order to eliminate traces of oxygen in the ambient air
- The sampling needle is then pushed into the bottle.
- Finally the wine is pushed, by nitrogen. into the system towards the sensors.
- All operations are performed visually behind the protection of a plexiglass shield
