Since the first trials carried out in the 90's, observation and tasting are the two factors which have enabled us to develop simple and practical models, easily understood and managed by all oenologists.

Oenodev would like to maintain and develop this basic method, which has contributed to the current success of micro-oxygenation. That's why Oenodev consecrates 80% of its activity to monitoring the evolution of this technique, either directly or indirectly.

The information we gain from this is used to enhance our practical model and brings up some basic questions ; these questions are dealt with through fundamental research (10% of Oenodev's turnover) within the INRA* at Montpellier.

Oenodev transfers this know-how to its clients through a personalised consultancy service, and also through regular training sessions; however, the method is different depending on the country.

France

Companies working with a non-Oenodev oenologist

Oenodev regularly organises training sessions for consultant oenologists in Madiran (Gers) or in different regions of France. A 3 to 5 year follow-up and support period follows this.
Due to the considerable investment and increase in labour that micro-oxygenation gives rise to, these consultants re-invoice this service to their clients (the "suivi-elevage" (elevage monitoring) contract.

Large companies (over 20 000 Hl)

In this case, Oenodev can (depending on the availability of its personnel) develop elevage tools (temperature, oxygen, lees, wood) within these companies.

Oenodev's aim being to convey as much of its know-how as possible and to ensure correct installation, this work is carried out over 3 years.

The framework covers :

  • organising sensory exam techniques adapted to elevage, vinification and product objective definition
  • installing the necessary computer hard/software (or adapting that already installed) so as to organise collection and reproduction of information essential to the monitoring of large volumes
  • handling elevage tools and, if necessary, changing the vinification method

ALL OF THIS, ALWAYS ACCORDING TO PREDEFINED OBJECTIVES  : Oenodev will never claim to bestow a particular style on any wine...

Oenodev can, however, establish methods which can help the client, should he so wish, define his product profile.

World Wide

Abroad, we work with a number of structures who already have a vast experience of wine.

With the help of a consultant oenologist who proposes the consulting that goes with the equipment, Oenodev very progressively transferred its skills to these structures (see our distribution network on the "Contacts Us".
